Potato Recipe
When eaten with the skin,
potatoes are high in complex carbohydrates and fibre. Potatoes also give you
vitamin C, vitamin B6, niacin, iron, magnesium, potassium, and zinc. Caffeic
and ferulic acids, phytochemicals in potato skin, may team up to help
destroy harmful carcinogens. Scrub new potatoes under water and retain the
skin, or peel very thinly as most nutrients are close to the surface.

Cholorogenic acid, another
phytochemical, may block the formation of cancer-causing nitrogen compounds,
and the cardioprotective B6 vitamin may lessen symptoms of depression,
insomnia, and premenstrual syndrome (PMS). Additionally, potassium-rich
foods such as potatoes are linked to enhanced cardiovascular health and a
lower risk of developing kidney stones. |
