Melon Recipe
Although mostly water,
melons are very nutritious, providing vitamins A and C, potassium, and other
minerals. Cantaloupes and other yellow varieties are especially high in
beta-carotene. Many melon varieties provide plenty of bioflavonoid,
carotenoids, and other plant pigments that help protect against cancer and
other diseases. Watermelon, for example, contains lycopene, a carotenoid
that is thought to lower the risk of prostate cancer. |
