Carrot Recipe

Carrots contain large amounts of nutrients called arytenoids, some of which the body converts to vitamin A. Many studies have demonstrated that vitamin A reduces the incidence and severity of infectious illnesses by helping to keep the mucous membranes healthy and intact. Vitamin A is essential for healthy hair, skin, eyes, and bones. Moreover, a deficiency of vitamin A causes night blindness, an inability of the eyes to adjust to dim lighting or darkness. Consuming just one carrot every few days will provide enough vitamin A to prevent night blindness.

 

Carrots are our most abundant source of the antioxidant beta-carotene. Research suggests that people with high blood levels of beta-carotene have lower odds of developing cancer and heart disease. Additionally, a recent study found that research volunteers who ate about one cup of carrots a day had an average 11 percent reduction in their blood cholesterol levels  after only three weeks. Lowered cholesterol levels, in turn, decrease the risk of heart disease
